Vanilla Sponge Cake
Oven Temp: 175°C / 350°F / Gas Mark 4
Ingredients:

  • 200g granulated sugar
  • 115g unsalted butter, softened
  • 2 large eggs (approx. 100g)
  • 10ml vanilla extract
  • 190g all-purpose flour
  • 7g baking powder
  • 120ml whole milk
    Method:

Cool in tin 10 mins, then on wire rack.

Preheat oven. Grease and line a 20cm round cake tin.

Cream butter and sugar until fluffy.

Beat in eggs, then vanilla.

Mix flour and baking powder, then add alternately with milk.

Pour into tin and bake 30-35 mins.
